Red Cabbage Slaw

RED CABBAGE SLAW — Recipe courtesy of Janna of Nourish Cooking Co.

INGREDIENTS:

• 1 pound thinly sliced or shredded red cabbage
• 1 cup chopped cilantro (packed, stems ok!) or sub-Italian parsley.
• 3-4 tbsp fresh lime juice, more to taste
• 1 tbsp maple syrup
• 1⁄2 tsp sea salt
• 1 tsp ground cumin
• 1⁄2 tsp ground coriander
• Pepper to taste

For WFPB version of this recipe, substitute 1 tbsp of date paste for 1 tbsp of maple syrup

INSTRUCTIONS:

Shred the cabbage by very thinly slicing or use a mandolin.
In a mixing bowl with the cabbage add cilantro, lime juice, maple syrup, salt,
cumin, coriander, and pepper.
Toss well. Taste and adjust salt and lime to your liking.
Keep in fridge until ready to serve. Leftovers are good for 3-4 days.
