Tofu Scramble
TOFU SCRAMBLE — Recipe courtesy of Sakinah of Edgie Veggie
INGREDIENTS:
- 1 block firm tofu
- 1 cup baby bella mushrooms
- 1/2 of red bell pepper
- 1/2 of yellow onion
- 2 cups spinach
- 1/2 tsp black pepper
- 1/4 tsp turmeric
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- 1 tsp smoked paprika
- 2-3 tbsp nutritional yeast
- 1/4 tsp black salt or coconut aminos, or omit
INSTRUCTIONS:
Place the pan on medium heat and preheat for about a minute
Crumble to tofu with hand and add to the pan.
Add most of the vegetables, onions, bell peppers, and mushrooms next. Cook for a few minutes
Next, add the spinach and the spices
Sautee and stir until the vegetables are cooked. Approximately 10 minutes on medium heat
Enjoy tofu scramble with side of whole grain toast and/or avocado
